Thanks for sharing! I hope you feel better soon!! On your comment on the use of honey, I can see that better use for the 2nd fermentation. Honey has antimicrobial properties that may interfere with the microbial growth needed during the first fermentation. But, I'm open-minded for creative minds 😊.
I thought that as well, but it really is as easy as making a batch of sweet tea! I have a reminder in my planner for every time I need to make a new batch just in case I get too busy. I say just go for it. The scoby I bought was inexpensive and I have already gotten my moneys worth. I think mine was 13 bucks and Kombucha in my stores are $4 each for a 16oz bottle..
