INGREDIENTS
1 4-5 pounds boneless turkey breast (fresh, not previously brined)
1 Tablespoon Signature Sweet Rub
CINDER BRINE
3 cups apple cider
2 cups water
1 cup apple cider vinegar
¼ cup salt
¼ cup brown sugar
¼ cup Worcestershire sauce
2 Tablespoons Signature Sweet Rub (or your favorite BBQ seasoning)
1 Tablespoon garlic powder
1 Tablespoon onion powder
INSTRUCTIONS
Combine all ingredients for the brine in a large bowl and whisk until the sugar and salt dissolve.
Submerge the turkey breast in the brine. Cover and refrigerate for 8-12 hours.
Preheat your smoker to 275 degrees F. Apple wood goes great with this meat.
Remove the turkey breast from the brine and pat dry. Sprinkle the turkey breast on all sides with the sweet rub seasoning (or your favorite seasoning).
Place the turkey breast on the smoker, close the lid, and smoke for approximately 3 hours or until the internal temperature of the meat reaches 165 degrees F.
Remove the turkey from the smoker. Cover lightly with foil, let rest for 5 minutes, then slice and serve.

Absolutely love this! Been watching your videos for a while but this is exactly what we’ve been talking about for something new to smoke! Love the family interaction in your videos, shows the real you which is why so many of us watch you. Thank you for what you do!
Can’t wait to try this today. Memorial Day smoke out. 😊
Just knocked this recipe outta the park! Fed it to my wife an stepdaughter. They both do not partake in turkey but they tried for me since this is my thanksgiving before I ship out to work for a few weeks. Baring some hiccups with my pellet smoker all went well. Thanks for putting this out there.
OK we did it!! AAAAMAZIING!!! it was a HUGE hit with the whole family. That's really hard to do but the turkey was seasoned with your sweet rub and the sweet and little heat was a hit!!! FINALLY no one said it was too spicy (which I tend to do) this rub will now be a staple for all the sweet rub I need. Thank you so much!! The brine was easy and your directions were fun and right on point.
I didn't get to make this for Thanksgiving, but I referred your recipe to a friend who did and he loved it. Thinking about it for Christmas now!
New to smoking but I followed this recipe on Thanksgiving, all but the splashing the brine out on the floor and counter. I did 3 whole turkey breast with the bones in and they turned out amazing! My wife has never let me get involved with the turkey on Thanksgiving because we have a lot of people to feed and she is well known for fabulous turkey. So the pressure was on! She said it was the moistest turkey she has ever had and told me next year I can make the ham too. I tune into HEY GRILL HEY before I smoke anything and you have never let me down.
Thank you for the informative video. I can imagine this show on cable food network some day. Great job. The turkey looks amazing also👍👍
Thank you for this recipe. Made my turkey delicious!!!
I love your videos and Todd is beyond lucky to have someone who love to cook and beautiful! Can’t wait to try this brine on my next day off!
we're making it this weekend with daughter and her fiancé on my pellet smoker. a family that cooks together..... thanks, you're great.
I love that you left in the brine wave splash, lol and Susie you in the smoke kinda gave this video a slight Halloweenesque vibe.
I think this is the best video you guys have made! Awesome!
How did you know I was looking for turkey recipes today to prepare for Thanksgiving? I think I'm going to try this method on a whole turkey with your turkey rub. Also, how do you only have 54K subs? I've been telling everyone about you and my whole extended family raves over your pulled pork! I love that your recipes use ingredients I can find at my local grocery store. Great job! Look forward to your all your videos.
I am about to try this for Our Easter meal tomorrow, If it makes us smile and have as much fun even a tiny bit as much as you guys do, That'll do it for us!! We can't wait!!!
Turkey bones for turkey stock is one of the amazing perch of smoked turkey.
Looks amazing. I have that exact carving set!!!
This looks amazing. I think I might use your brine recipe for a whole turkey to deep fry for Thanksgiving this year.
We used this recipe on a whole turkey for Thanksgiving. It worked out great! The only problem was that there were no leftovers. My nephew is a chef and he asked for the recipe. Thanks for all of your ideas.
Ok, first, loved this video tutorial! I had a butterball turkey breast/roast and followed your instructions to the tee...minus the brine spillage LOL. Brining is the way to go! Soooo moist and seasoned just right. Second, I also followed your sweet rub recipe with one change to the application. I basted the roast lightly with some yellow mustard so the rub would adhere more and let it sit to sweat a bit before placing in the smoker. I used apple chips with a slightly less addition of bourbon barrel oak chips.
Third, not sure if it made any difference but I also added apple juice to the reserve pan at the bottom of the smoker...probably from my brisket training.
Fourth and finally, I made the green bean. casserole side you shared. Wow!! crazy good!!
Cant wait to give this recipe a try today for our Canadian Thanksgiving.
What a great looking turkey, thanks for sharing!
Such a great recipe! I love your videos and bbq smoking advice. Keep up the awesome content! :)
I tried this recipe last year at Thanksgiving for the first time. There was some real pressure because my wife is well known for making great tasting moist turkey. After tasting mine she said I could make it next year too. Well, it is next year and I have 2 small turkeys in the brine right now and they have an early morning appointment with the smoker tomorrow. If you haven't tried this recipe yet you need to get after it. People will definitely be requesting your turkey smoking again. I don't smoke anything without checking in with Hey Grill Hey first. Happy Thanksgiving.
Look into The Briner Bucket. It has an interlocking plate that ensures your food stays submerged when brining or curing meats!
Doing this with a boneless turkey breast tomorrow. Can’t wait!
Making me hungry for thanksgiving.
This looks delicious. Definitely trying this
Heck yeah! Let me know how it goes!
Smoked turkey breast is my absolute favorite. Great video!!
Thank you!
Excellent video: sound, videography & editing .. love the chapters ! Link to recipe !
I love the unedited video.
Would you suggest injecting along with brining? I get tons of compliments with your apple cider pulled pork which suggested injections.
I cannot wait to try this! I’ve never had turkey that’s not dry
ANNNNNNNNND.....let’s not overlook that sweet potato casserole recipe!
Do it! That recipe is live on my site heygrillhey.com
Hey Susie, love your channel !! I've used several of your recipes and they always turn out great. I want to use this brine and do a smoked turkey breast with a cranberry glaze but I don't know if I should season the breast with a rub or just use salt and pepper?
Nice vid I will be doing this tomorrow 👍
Just finishing a 6 hour cook and it smells AMAZING
Another great video, folks. I would love to know what brand and size bowl you put the turkey in.
That was hilarious when you got brine everywhere 🤣
Your the best
I made this for my family's Easter dinner and it came out amazing. The brine really helped keep this turkey juicy. Thanks for the great recipe!
Made this last weekend and I can attest it IS that juicy...and the turkey dry rub is phenomenal.
Thanks for the great ideas
Heck yeah! Way to nail it!
Great content. You guys should do a bloopers segment. You both seem to have a lot of fun doing this regardless of what happens.
We will!
I CANNOT wait to make this. Also. Murder hornets are terrifying!
Think I have my Thanksgiving recipe.
The 15 pound Turkey I got was already pre brined. I want the flavors of your brine recipe but since it was already pre brined, can you just shorten the duration or the brine time?
I'm curious about the size of that lovely covered bowl you used. Do you have a link you could share of where I could purchase?
I believe that is from Sam 's club; either Viking or Tramintino (spelling?).
What kind of stainless bowls were those?!?
I am trying this, 5 hours in and it seems like the temp is stalled at 153. looking forward to when it gets done.
What knife are you using?
Should I double the brine ingredients for a 9 lb breast?
Great video. I would of loved to see you cook a whole Turkey legs and all next time
Thank you! Stay tuned
@@Heygrillhey could you also show how you carve it
You must be one of the most beautiful women on youtube. Husband is a lucky dude... Happy thanks giving
How about that alliteration at the beginning of the vid!
I’m getting ready to smoke a 8.8lb bone in turkey breast. Do you average an hour per lb at 275 degrees?
Hold the phone! Where did you get that bowl?
So I would triple the recipe for a 17 lb. Turkey?
Where do you get the turkey breasts prepared like that? Like just the sweetheart roast, where it hasn't been seasoned or brined already?
The easiest way I've found is to ask a local butcher. You may even get lucky talking with the butcher's counter at the grocery store.
@@Heygrillhey13:13
Is the salt table salt or kosher salt?
Always kosher salt!
What would be the best way to cook in oven if do not have a smoker?
The same recipe will work, you'll just miss out on the extra smoke flavor. A smoker is basically just an outdoor woodfired oven.
Struuuusel! LOLOL
I am smoking 2, 5.5lb bone in breasts on thursday. Will that brine recipe be enough or should I double it? I thought there was a recipe somewhere for your sweet rub. I want to use that as well. Happy Thanksgiving to you and your family.
I did a 8 pound whole turkey that way. There was no left overs
@@crossroadskidsonline2490 yes I did.
Can i do this recipe in the oven it’s going to be raining all day on thanksgiving?
Yes!
Is that a non reactive stainless steel bowl? Some stainless is not and the meat would take on the flavor of the metal. Also not to use aluminum foil. Maybe mention that to your viewers. Awesome recipe and cook.
Does the boneless turkey breast come out just as moist?
Absolutely!! The bone doesn't matter really as long as you're cooking to the correct temp!
I wouldn’t brine any poultry with acid for longer than two hours. It can really mess with the texture.
Maybe try closing the lid?
Just smoked a 7+# breast- frozen- brined overnight- done in 3 hrs. Why so much quicker?
