if you feel you will have good learning exposure in current startup, then this is the right time to take risk and learn from startups and eventually after few years (may be 2-3 or even 4-5 as you said) you can move to more stable secure companies...
first five years focus should be on learning, learning and learning while having decent package and hikes..
