This is actually a pretty thorough overview, well done. I'm working on a micro-controller based chip-synth (YMxxxx series, SN76489...early SEGA) currently, but this was definitely a good general refresher of the midi protocol.
My favorite college memory so far was introducing my friend to "Blue Monday" only to hear that he recognized it! "Oh ya... i remember when they played this in the clubs around 2003" ... and I didn't know how to follow that up, man.

Midi does have some drawbacks though. When connecting DAC midi out to a hardware synthesizer midi in (synth audi out would connect to dac audio in), there's some latency with the sound, and it can kinda start drifting at some point. Any sort of jamming becomes less satisfying.
You forgot to mention CV/Gate. Which was really a fun interface because it used analog voltage levels of +/- 5V to address notes and a Gate signal to indicate a key was pressed or released. It's fun when you put an audio signal to like a CV/Gate trigger of a filter...
Please do an episode on the MOD Amiga music file format. They're about as small as MIDI and it and similar formats were used in DOS games. The MOD format also influenced an entire underground digital music community and is interconnected with the demoscene. MOD is also one of the 4 main formats used for what is better known as 'Keygen Music'.
dude! i used midisoft sessions back in the windows 3.1 days and did the same thing as you where I had gotten the ff7 soundtrack and then rearranged it and stuff :P
