Technically, you should refer to them as The Catalans because they are from the Autonomous community of Catalonia. Some locals will get very angry if you call them "Spanish". I always use the term "Iberian Peninsula".

In hundreds of years doing this tradition nearly nobody died! HUNDREDS of years...and this is done daily... And since we use helmets nobody died! They teach you how to fall and how to take safetly the ones that falls. You'll probably die in a car accident or skiing before falling from this human tower!
