Cinnamon Rolls - Culinary Haven

Ingredients:
Dough:
120ml boiling water
120g butter
60g sugar
2 large eggs
20g dried skimmed milk
300g plain flour
1tsp salt
5g instant yeast
Filling:
50g butter
40g soft brown sugar
40g white granulated sugar
1tsp ground cinnamon
2 handfuls of currants
150g icing sugar
1 or 2tsp vanilla sugar (to taste)
2TbSp hot milk
Glaze:
150g icing sugar
2TbSp hot milk
1tsp vanilla sugar

Looks great but can I ask why you put the yeast in a sieve?
