    When Wilding say rural method they mean cold racked to retain residual sweetness and then if fizzy last bit of fermentation naturally in the bottle. I doubt this is disgorged and they wouldn't top up with something else.

      You are correct. The issue is that some producers (in my experience) use 'rural method' and 'ancestral method' interchangeably. And some producers describe the process I outlined as the 'rural method' and include disgorging without freezing the neck of the bottle ('a la volee'). Artistraw in Herefordshire are one example. So I sometimes get mixed up!
