one person cooking is insane! and the menu isn't simple either with extra items solely for the regular costumers request as well. anyone else would've burnt out maybe 2-6 months but the Japanese are the exception on this, truly an amazing people and mindset.
Kinda surprised that he made goya champuru, an Okinawan dish that I love and which I just cooked yesterday 😋 Definitely a nice menu with lots of interesting things to try, like the negitoro, chikuwa egg tempura, and tororo bukkake!

I used to be part time cook at a Asian restaurant in the US when I was in college. I had to remember how to make over 20 dishes, it's not really hard.
