Is there a way to call the "Variation" at 00:08-00:12? I encountered it in a lot of Bach's works and its beautiful to hear, I wanted to know if it has a specific name or it's "Just" great composition

It's the ultra famous "(counterclockwise) circle of fifths", that's the answer you were looking for. en.wikipedia.org/wiki/Circle_of_fifths In the 'Baroque era' section you can hear several examples of exactly this thing.
Divide the piece into sections. Repeat each section many times without any errors in comfortable tempo with metronome. Then repeat a whole piece many times from slow to faster tempo, increasing metronome value by 4-6 if there were no errors. Be patient and persistent. Happy practice.
