SMK's show is to its disadvantage. an average person in Texas would hesitate to try their roast-style brisket if and even in any place in the world where there is a basic knowledge on how a "smoked brisket"should be prepared. Not any "juicy"concoction is a nice and right juicy meal, especially when it comes to low-and-slow cooked meat, which is cherished only if moisture is maintained mostly inside of muscle and fat tissue, owing to maintaining a continuous proper cooking technique, rather than forming a basin of sauce in the plastic and foil raps, submerging such a mistreated brisket by wet roasting it, thereby soaking and scraping away any precious seasoning and bark formed during the first stage dry smoking process, if at all. The rest of the episode is interesting. Thank you for covering that.
