Cook Lettu (Finnish Pancakes) with Okra Playground

Join Okra Playground members Maija and Essi near one of Finland’s many lakes in Laukkoski to prepare lettu, or Finnish pancakes. Follow along to try it yourself!
1) To prepare the batter, mix 3 eggs and 4 cups of milk in a bowl. Then, combine with 2 cups of flour. Add a half teaspoon of salt and a tablespoon of oil. Let batter sit for 30 minutes.
2) Pour over a hot pan coated in oil. Pancakes will be thin. Flip halfway through cooking.
3) Top with powdered sugar, jam, whipped cream, or berries of your choice - including Finnish lingonberries. Fold or roll to serve.
