Odin Theater is in Denmark and anyway it is about the expressed emotion not what they are saying. It is an exercise on using your voice to communicate.
I believe the concept is that actors do not need to speak any specific language in order to be understood. The emotions expressed through the voice and body are enough to get a message across. I did a few workshops at the Grotowski centre in Wroclow in 2018 and we were asked to speak in a fake language to prove this.

Are they speaking in any language, or they have their own language? We (Cz) call that language Svojština, but I do not know how other people call it.

Another reason is that words are intellectual but acting goes beyond the intellectual mind so its helpful in "getting out of the head".
