Escaping the cops with 3+ stars is quite easy - as long as you're in the city. Steal a helicopter or call the blimp and follow the railroad tracks. There are many tunnels into which the police will only go a small distance and, of course, helicopters can't see underground. You used one of those entrances in your first heist when you escaped on a bike. The entrance is north of the Arcadius tower on the highway. The easiest one to find in a hurry is the one on the left side of the northern end of the drain pipe. All you need to know is whether you're left or right of the drainpipe, drive into it, drive north on the left side, go ino the tunnel and drive past the sewer grate on your right side. Safe.
