my question is when one of the teams sees that a ball was caught, wouldn't they gang up on that player right on the line? I could see that happening.

If the ball thrown to the person in the endzone is not caught, does that matter? or would the ball be returned to the team to be thrown again?

Ball could go back to any team, but it’s likely the player who missed it will try to toss it back to their team. Doesn’t really matter
