I think it's nice you show the beginner experience. It can help people feel like they are not crazy and alone to see how slow the learning process is. Take your time and sleep on your progress, you will see steady improvement!

The muting part is hard to understand, I make so much extra noise when trying this and have no idea how to mute individual strings. I mean it's either palm muting everything all the time or extra noise.
I’m no expert but it definitely helps to lift your hand up after fretting a note (not too much up but to the point where you’re only touching the string like your trying to make a dead note, it helps.) I’d recommend doing this with the second exercise he has shown in the video.
Actually you can get a chord changer thing to clip on the fret board that helps people with arthritis. It's labelled with chords letters you'll simply press on the one you want

Yep you should only be fretting a string for the moment you want to hear the sound, then let go. Only be fretting one string at a time
