The defination of Homeostasis varies throughout various GCSEs resources.
Another definition of Homeostasis is = maintenance of constant internal environment in the body.
Would you still get the mark if you wrote the above definition or should I remember 1:09 definition instead?

It's a good definition to remember in your head, but in an exam it's better to write down his definition, the green highlights show potential mark points, so you should make sure to never emit the highlighted bits when in an exam

Is the coordination centre the same as the CNS?

That's correct in the case of the nervous system. In the case of hormonal systems, it can be a bit more complicated (eg the pancreas is the coordination centre for the control of blood glucose).
