Hi Colleen; I live in a small town on the Ontario shore of Lake Huron, and other than the blizzard at Christmas, we have had an unseasonably warm winter... a January like I have never seen in my lifetime! I just wanted to tell you that I love the hominess and comfort you instill in your channel. I loved the entire series you did at Christmas time, and have been encouraging my children to give you a watch and subscribe. They are all young, but like to cook, and as your and my cooking styles are very similar I have assured them that it would be like cooking with a young grandmom. I do so enjoy your channel, and wish you continued success. In friendship, Mary Lou.

I wanted to create a channel where people would feel like they were the the kitchen with me and it seems like I have succeeded with that. I hope to continue to bring you new videos that you will enjoy watching. Best wishes, Colleen

Save those veggie scraps! They make the BEST veggie stock. We save our veggie scraps (asparagus bottoms, celery ends, onion skins, garlic skins, broccoli stalks, etc.) and freeze them in gallon-size ziplock baggies. When we fill three or four bags, we take the scraps and boil them down for veggie stock and can it! Nothing wasted! We, too, compost but save that for coffee grounds, banana peels, apple peels, etc.

Some years ago, my sister gave me a similar recipe. A layer of carrots, potatoes, onion, peas (i switched to frozen lima beans), each layer seasoned with s&p. Top with raw hamburger (80 or 85% lean - not leaner) s&p and an 8 oz can of tom sauce with a little water. This is baked in a tallish covered casserole dish for 2 hrs at med heat. I never made it as it sounded too bland & boring. I was so wrong. She prepared it once when I was visiting & I couldn't get enough. The blend of flavors is delicious. So quick and easy & it was not greasy. I love your channel for real cooking ideas. Thank you.

My grandmother was making this in the 19teens and we make it often in winter. She called it French Bake though she was not French but her husband was from Wyebec as a baby(1887)
The difference is she put the raw burger in two layers the first on the bottom then onion and pepper and salt. A can of soup half diluted with water poured over the potato layer and then repeated.
It baked for almost two hours at 350 f. And Everone still loves it. My mother always served a green vegetable on the side with crusty bread. Bon appetite

It’s winter time when I’m watching this video.
I want to can some “mexicorn” which used to be on shelves in grocery stores . I have a recipe for canning it but would ask you to see if you have or could find a recipe for this canned staple I like a lot. It makes a great veggie to serve with Mexican themed dinner menus.
If so, could you make a video on canning the “mexicorn” using frozen corn ( it’s now in winter time) and colored bell peppers and ? Onions? Thank you. I like to can staples in winter time.
God bless you and your family.
So, I could make this before and take to a potluck where it would stand for a while? Thanks. I’m always at a question when this potluck is at hand.
Or you could put it into more containers and freeze one for some other day you don’t have time to cook. Thank you for your video. I like it and will try to make it!

I'm just watching the video but I had to stop just to say thank you so much, it is my dad that asked for it he's 76 and does not cook I was a very picky eater growing up but now in my 50s I enjoy trying these dishes. I know I am going to make it exactly like you probably for Sunday dinner as a treat for my dad. I'm just so tickled how fast you did this this vedeo. Thank you so much.. p.s I think my dad is going to love this it's pretty basic watching you do it, I think your totally right about how durable it can be I wonder if I split it if I could make freezer meals with it after it's cooked of course. Then when my dad isn't here with me, he can just pop a small one in to warm when he wants to.. the thought of raw beef didn't appeal to me either. I'm sure it would be fine, but it's a lot of extra oil you just proved wasn't needed.

I almost threw up when I saw that you were making shipwreck! 🤢
My mother…god rest her soul 🙏 would make a very different version of this to feed our large family and did it on a strict budget. I grew up in cape Breton, NS and I remember during my childhood how she’d make it….first…..boil your hamburger in water on the stove. Then add canned peas/carrots…..don’t drain them! Into the pot. Add some ketchup for colour and taste, if you have a can of tomato soup, throw that in there also. She would make a pan of scones, make sure they are touching, once baked….take a big knife and cut the top off, leaving the scone bottom. Once your pot of hamburger was boiling…..before serving add some onion flakes and instant mashed potatoes to it! Take the pot mixture and pour it over the bottom half of the scones…..grease and all! Then you place the top layer of scones on top.
We’re almost done…..now get your block of velveta cheese and chunk it over the top of the scone and place it into the oven until the cheese melts! That’s the version of shipwreck I know 🥴🤢
