Hi Colleen; I live in a small town on the Ontario shore of Lake Huron, and other than the blizzard at Christmas, we have had an unseasonably warm winter... a January like I have never seen in my lifetime! I just wanted to tell you that I love the hominess and comfort you instill in your channel. I loved the entire series you did at Christmas time, and have been encouraging my children to give you a watch and subscribe. They are all young, but like to cook, and as your and my cooking styles are very similar I have assured them that it would be like cooking with a young grandmom. I do so enjoy your channel, and wish you continued success. In friendship, Mary Lou.
Hello Mary Lou, Thank you so much for this wonderful message. I wanted to create a channel where people would feel like they were the the kitchen with me and it seems like I have succeeded with that. I hope to continue to bring you new videos that you will enjoy watching. Best wishes, Colleen
My mom always made this. She fried onions and hamburger together and lots of times used frozen mixed veggies with potatoes. We called it husbands delight. So good!
Save those veggie scraps! They make the BEST veggie stock. We save our veggie scraps (asparagus bottoms, celery ends, onion skins, garlic skins, broccoli stalks, etc.) and freeze them in gallon-size ziplock baggies. When we fill three or four bags, we take the scraps and boil them down for veggie stock and can it! Nothing wasted! We, too, compost but save that for coffee grounds, banana peels, apple peels, etc.
Some years ago, my sister gave me a similar recipe. A layer of carrots, potatoes, onion, peas (i switched to frozen lima beans), each layer seasoned with s&p. Top with raw hamburger (80 or 85% lean - not leaner) s&p and an 8 oz can of tom sauce with a little water. This is baked in a tallish covered casserole dish for 2 hrs at med heat. I never made it as it sounded too bland & boring. I was so wrong. She prepared it once when I was visiting & I couldn't get enough. The blend of flavors is delicious. So quick and easy & it was not greasy. I love your channel for real cooking ideas. Thank you.
You peel just like I do. My husband thinks it's funny because he is a peel outward person. I started out peel forward but switched because it was much more comfortable for me when I started to peel back towards me.
@@oursilvermoments6028 I hear you. I used to peel with a knife before I married my husband because it was what my mom did. He showed me the peel out with the peeler but it never felt comfortable. I honestly don't know why I started peeling towards me but it's been almost 30 years & I don't see myself changing it.
I have a friend from Nova Scotia who made this dish but she would make up a recipe of Bisquick, roll it flat, pour on ketchup, roll it up and cut it like you would a cinnamon bun and cook it with that on top! Like a pot pie I guess. That’s for reminding me!
I think this recipe would warrant getting the food processor dirty to slice all those veggies! I love oregano, so a little extra won't hurt (rosemary is strong so be more careful with it!). It looks like a hearty dish.
Hello Beth, we have a blue bird day here today but now the temperature has dropped to minus 12. But I will take it because its much more seasonal than what we have been getting. We need snow here so that everyone has water next year. Have a wonderful day, Colleen
My grandmother was making this in the 19teens and we make it often in winter. She called it French Bake though she was not French but her husband was from Wyebec as a baby(1887) The difference is she put the raw burger in two layers the first on the bottom then onion and pepper and salt. A can of soup half diluted with water poured over the potato layer and then repeated. It baked for almost two hours at 350 f. And Everone still loves it. My mother always served a green vegetable on the side with crusty bread. Bon appetite
I honestly had never heard of it but I am so glad to be able to share it because it is a really good recipe. Thank you for sharing that sweet story with us. Best wishes, Colleen
Colleen your casserole looks delicious! I make one almost like this one but I use a can of cream of mushroom soup in place of the tomato , and I use an envelope of Lipton onion soup mix, and I agree I always cook my hamburger before I put it in any of my casseroles ! God bless ❤️🙏🙋🏻
Will make this, have half for supper + then freeze the other half, for when I need a quick supper. Enjoy watching you prepare recipe's, so I get a heads up, when I go to do them
I make that 7 layer dinner at least once a month, I add quarter cup ketchup to the sauce and a layer of breakfast sausage on top of the burger. I season my burger with garlic plus and make in a dutch oven pot. Enjoy your videos, from Calgary Alberta.
Hello Margaret I guess in the grand scheme we are almost neighbors. Thank you for the added ingredients I will keep them in mind for the next time I make this. Cheers, Colleen
My husband came home while it was still in the oven and said "I don't know what you got cooking there good looking bit it smell delicious." And it tastes delicious as well. Cheers, Colleen
I wonder if you could use a small jar/can of spaghetti sauce instead of the tomato soup? With the seasonings you put in the soup it "seems" close to a spaghetti sauce.
It’s winter time when I’m watching this video. I want to can some “mexicorn” which used to be on shelves in grocery stores . I have a recipe for canning it but would ask you to see if you have or could find a recipe for this canned staple I like a lot. It makes a great veggie to serve with Mexican themed dinner menus. If so, could you make a video on canning the “mexicorn” using frozen corn ( it’s now in winter time) and colored bell peppers and ? Onions? Thank you. I like to can staples in winter time. God bless you and your family. So, I could make this before and take to a potluck where it would stand for a while? Thanks. I’m always at a question when this potluck is at hand. Or you could put it into more containers and freeze one for some other day you don’t have time to cook. Thank you for your video. I like it and will try to make it!
Its interesting because you need the sauce to cook the potatoes and carrots in but if the rice was left out I think it might be soupy if that makes sense. Cheers, Colleen
I am a sucker for pot luck dinners. The next one I go to, I am going to make this Shipwreck Casserole as my contribution to the table. (will take your advice and perhaps add a little more salt to the tomato soup seasoning mix)/
Thanks Lee, I remember my mom cooking dishes similar to this. Things that just came from her canning jars and the root cellar all put together to make a yummy dish. Best wishes,
Was the rice instant or long cook??? I'm thinking 30 min - but thought I would ask before I messed up. 1/2 recipe in an 8X8 would make 4 meals for me alone. Gonna try it for sure.
