I can't remember if I've commented this before but I think you would love a game called Ironsworn. It is a solo rpg (so think dungeons and dragons but by yourself) you create the truths of your world, your character, and goals. Journaling is a big part of the game and I like to draw out my maps and paint them once I've explored the area. The pdf version of the game is free! I loved it so much I ordered a physical copy. From what you have shown of yourself in your videos I think you would really love this! You could even create an asset of your doggo to explore with you! Someone has also created sheets for the rules and oracles formatted for traveler's notebook!
