i love congee! it is just literally rice with more water than needed to cook rice! its like soup, its rice cooked in stock... you can get a similar in marks and sparks chicken soup with wild rice soup... its not exactly like congee but close

Congee is rice base, porridge is wheat base. Add a splash of soy and a few drops sesame oil to any congee and it will taste great. So weird to call it a "rice roll" it's known as cheung-fun which is also a dim-sum dish. Cheung-fun is the kind of texture in food that the Chinese palate prizes, soft, tender and slippery almost no chewing required.
I agree, I dislike it when people give weird english names just because it's easier to pronounce😂Local Cantonese do not add soy or oil into their congee because this will make the congee more watery separating the rice from the water imo. They only add white pepper if necessary.

There is also a lot of fresh seafood ( swimming in the tank fresh ). Dim sum is prolly the most famous here but there are a lot of levels up to 1 star Michelin to fit every pocket- preferably hand made. the trick for eating congee is having your spoon scoop the edges to avoid burning yourself..that's what I was taught as a kid.
Even better for eating anything hot is always better to scoop the surface and never scoop the bottom lol 😅😇

when we order congee,commonly the chinese will order other dim sum for matches.such as shrimp dumplings,xiaolongbao ect to do with. only eat congee stomach will be hungry very soon😂. the same is like milk always matches bread or something to eat

Used to do my visa run to Guangzhao when I was working in Macau. They have fantastic Cantonese cuisines. Should be good to have Ben's eyes tested in China. Very high tech and not expensive even if he need glasses
