    Presenting date cake recipe - a very tasty and easy to make recipe.This will be a perfect snack to add to your hot drink especially in winter and a special treat for your guests.
    Tips
    - Keep sugar syrup on low flame 🔥 once it starts to boil.
    - Add 1-2 tablespoons of hot water to the syrup to loosen it,if the syrup becomes thick.
    - Do not add hot sugar syrup straight to the cake batter, add 2 tablespoons of hot water to the syrup and then add to the cake batter to prevent it from crystallizing.
    - Be careful when adding hot water to sugar syrup as it can splash.
    - Do not add cold water to the sugar syrup as the syrup will harden(crystallise).
    - Do not use whisk when mixing sugar syrup into the flour mix as the cake batter will become thin and the dates will be at the bottom of cake.
    - Let cake cool before taking it out of cake tin or the sides of cake will split.

      The cake came out very well and was a big hit with all the people I gave a taste to. Just a few comments, though: (I hope you dont mind this, but I love experimenting!)
      1) You don't give the size (diameter) of the cake tin. I greased a 22cm tinready and then, when I had mixed the cake, I thought it was too small so I switched to a 25cm one.
      2) Because we mostly don't use cup measures in Western Europe, I followed your measurements, but I then weighed everything as I went along, and noted how many gms or millilitres , to make it easier for next time!
      3) You can, as I did, reduce the amount of oil used by substituting 100g of apple puree. ( I do this in any cake using oil and it hasn't failed me yet!)
      4) the recipe worked well with my glutenfree flour mix, but took longer to cook than your recipe said - about another 10 minutes.
      5) I put in 12 grammes of ginger powder, but it needs a bit more than that.
      Next time I will also use some stem ginger in syrup.
      6) Because I've found that dates often sink to the bottom of the cake, I mixed in half and then sprinkled the rest on top of the cake mixture in the tin
      7) I made orange infused icing for the cake (a friends suggestion), which worked very well, but it made me think it would be nice to put orange zest in the cake.
      8) I did use the vanilla essence, but I think next time I will put in coffee essence instead.
      Hope you don't mind all my comments. It is a great recipe!

      1) Sorry I didn’t realize that I didn’t add the cake tin size until you told me🫢
      2) With the measurements I’m quite used with the cup measurements,I might try and the different units in the description 😊
      3) Never knew about the apple purée tip for reducing the oil amount,will definitely try it!!
      4) Lightly sprinkling some flour on the dates before adding into the batter makes the dates to stick to the batter,preventing it from sinking.
      5) Yes,coffee essence sounds great with the date cake,I tend to add vanilla essence to most of the cakes I make😀

    I added a pinch of salt to the batter . For the sugar ,while it was getting caramelized, I added a tiny squeeze of lemon . And I added a dash of caramel essence along with the vanilla essence. The cake turned out to be really good and so yummy 😋👍

      Hi Vidya, sorry to hear that the sugar syrup got hard. I had mentioned it in the description that not to add boiling sugar syrup straight to the batter.Instead add 1-2 tablespoons of hot water to loosen the syrup little and then add it to the batter.Also I have heard adding a little bit of lemon juice will prevent the syrup from getting hard,but haven’t tried it.Vidya, I really hope it turns out well next time ❤️❤️❤️

      I had the same problem. When I let the caramel syrup to cool down , it hardens. How do you let your caramel cool down without hardening?
