2 thumbs size ginger
5 cloves of garlic
1 medium size onion
1 kg of chicken quarter legs and wings
3 tbsp of fish sauce
1/2 tsp of ground pepper
4-6 cups of chicken stock

3 branch of malunggay leaves

Tama yan... Sinangkutsa muna hanggang lumabas mantika. Pwede ring substitute ang mint grass ( tanglad) instead luya. Iwas spoil rin agad yan lalot mainit panahon ngayon. The best din sa sinigang ang sangkutsa sa sibuyas kamatis hanggang magmantika... Try nyo mamula mula ang sabaw at di parang " Nilagang Sinigang" 😜😜😜.

In my own way mula sa turo ng aking nanay. Hinhayaan ko rin ma-saute ng mabuti ang manok sa mahinang apoy hanggng medyo mag-brown na ito at manikit sa kawali, ito ay para mas kumapit sa manok ang lasa ng bawang, sibuyas at luya. At kapag nilagyan na ng hugas-bigas na pang sabaw ito ang pinakasabaw ng tinola ay nagkukulay brown dahil sa tmang pagkakagisa ng manok.

In our place we never use oil, garlic and union, only ginger, black pepper and sili leaves with sayote or papaya, you can taste the real taste of native chicken especially when you slightly burn the skin until its natural oil comes out with its natural aroma.

I use spinach leaves instead of malunggay, hard to find it here in Australia and then sayote(choko), if I couldn't get green papaya(papaw as they call it here). Same cooking.
