Two italian cheese used in carbonara: Pecorino Romano and Parmegianno Reggiano (Parmesan cheese) egg yolk (1 for 2 servings) The cheese is usually Pecorino Romano, parmesan, or a combination of the two.[1][4] Spaghetti is the most common pasta, but fettuccine, rigatoni, linguine, or bucatini are also used. Normally guanciale or pancetta are used for the meat component,[1][2] but lardons of smoked bacon are a common substitute outside Italy. Preparation The pasta is cooked in moderately salted boiling water. The guanciale is briefly fried in a pan in its own fat.[4] A mixture of raw eggs (or yolks), grated Pecorino Romano (put a little pasta water [the water used to boil the pasta] if needed) and a liberal amount of ground black pepper is combined with the hot pasta either in the pasta pot or in a serving dish, but away from direct heat (put the casserole on top of another casserole with boiling water), to avoid curdling the egg.[2] The fried guanciale (Guanciale is an Italian cured meat product prepared from pork jowl or cheeks. Its name is derived from guancia, the Italian word for 'cheek' or you can use pork belly boiled with water salt and venigar on slow fire (after the water boils and reduces) until most of the fat oil is extracted but still soft [semi chicharon] crispy but not crumbly) is then added, and the mixture is tossed, creating a rich, creamy sauce with bits of meat spread throughout.[1][3][4][22] Although various shapes of pasta can be used, the raw egg can only cook properly with a shape that has a sufficiently large ratio of surface area to volume, such as the long, thin types fettuccine, linguine, tagliatelle or spaghetti. Note: no cream will be used as the cheese mixed with pasta water, egg yoke, a little of the guanciale oil will make the cheese become very saucy and tasty because of the egg yoke and cheese mixture.
