Besan ka Paratha - best weekend brunch
Every once in a while I crave for comfort food, and besan ka paratha is comfort food for me. Not only is it easy to make, it is also very healthy, and given that I am a diabetic it keeps me within my diet restrictions. I usually eat it with mango pickle, some chutney and fresh curds. That makes it a complete meal.
Gram Flour
Gram flour, also known as garbanzo bean flour, chickpea flour, or besan, is a pulse flour made from ground chickpeas. Used in many countries, it is a staple ingredient in Indian, Pakistani, Nepali and Bangladeshi cuisines. Gram flour can be made from either raw chickpeas or roasted chickpeas. The roasted variety is more flavorful, while the raw variety has a slightly bitter taste.
Gram flour contains a high proportion of carbohydrates, no gluten, and a higher proportion of protein than other flours.
For dough making
1 cup wheat flour
1/2 T sp salt
1 T sp desi ghee
1 T sp oil
For stuffing
2 Tb sp oil
4 Lasun ki kali
1 T sp jeera
1/2 T sp ajwain(carom seeds)
1/4 T sp asafoetida (hing)
2 green chilly finely chopped
1 T sp ginger pest
1/4 cup Besan
2 medium size onion finely chopped
1 T sp salt
1/4 T sp haldi powder (Turmeric)
1 T sp jeera powder
1 T sp Red Kashmiri chilly powder
1/2 T sp Amchur powder
2 to 3 Tb sp coriander leaves (dhania)
1 T sp Kasuri methi
1/2 T sp chat masala
1/2 T sp oil
