  • Today I have made pork belly on the BBQ, this is a easy recipes
    Ingredients:
    1. Salt
    2. Pepper
    3. Olive oil
    4. Chili flakes (optional)
    Method:
    1. Pat dry the belly to make sure it is dry
    2. Add salt, freshly ground black pepper & chili flakes to the back of the belly
    3. Add Salt, freshly ground black pepper & chili flakes to the front of the belly, but with more salt than the back. This will help with the clacking
    4. Drizzle the Olive oil in your hand and give the pork belly a good rub, make sure the sides are rubbed with oil oil
    5. When your coals are done, make sure you have a indirect heat, place your pork on the grill
    6. Place a fire proof dish over the belly
    7. After about 5 minute, have a look to see if the fire is not 2 hot, then cover it again
    8. Grill the bottom side / rib side for about one hour and 10 / 20 minutes until you see the sides start to crisp up
    9. Turn the belly on the high heat or hot coals to make the crackling (make sure to have a look after a few minutes if the coals are not to hot)
    10. When the pork skin is crackling up then you know the belly is done
    11. Take off the belly

    Really good method. And your video was short and to the point. I have been trying to work out how to braai it long and slow for tenderness and you had the simple answer...move the coal around the edges and use indirect heat. Brilliant.
