Esther's kin Mordecai named her before she was taken, as he instructed to hide her Hebrew / Jewish roots.
It is written...
"And he was bringing up Hadassah, that is Esther, his uncle’s daughter, for she had no father or mother. Now the young lady was beautiful in form and beautiful in appearance, and when her father and her mother died, Mordecai took her as his own daughter."
(Est 2:7).
Similar to why everybody in each book of Scripture has their name changed, including the Son of God, as there is no letter J in the Hebrew or the Greek alphabet.
