I just finished rewatching the show so far and it seems to me she cares about Erin to the point that if she was sure he'd died she'd go on a rampage killing as many Titans as she could. I wouldn't be surprised by Mikasa getting together with Eren, and she's adopted so no sibling squickiness. Besides its not like any guy will ever be more important to Mikasa than Eren.
It be cute if Mikasa was in her room singing this song while looking at a picture of Eren ,and then Eren walks in halfway and stays silent letting her finish the song then she notices him and they stare awkwardly at each other for a few seconds.
I think it's quite normal for her to be protective over Eren. I mean, she did lose her family and witnessed the criminals kill both her father and mother. And she also witnessed her adoptive mother (Eren's mother) get eaten by a titan. It's normal that she doesn't want to lose any more family members; knowing that she is stronger and smarter than Eren, she knows that she can protect him.
