Wow, I've been cooking basic beef stir fry,s for years, and experimenting recently. This meal in restaurants has been one of our go to meals...I never thought I would be able to cook it as good, I was right. This recipe and the meal we just ate was better than any we've ever eaten.. I also made in half an hour the black bean sauce on your video, my wife says thanks as do I, great discovery at 65 lololol

This recipe is incredible! Thanks so much Marion, I couldn't find fermented black beans today, so I used tinned (drained and rinsed) and added some miso paste. YUM

Definitely, it would make for a very healthy breakfast, far healthier than typical cereal and toast though porridge or beans on toast are pretty healthy but obviously don’t have the fermented component nor the veg in the case of porridge.
I'm going to try this later this week, but I can already see that Marion has it right. The black bean sauce DOES need to be thinned, and oyster sauce is the best way to do that, along with a little water or low-salt chicken broth. Not burning the garlic and ginger to start with is absolutely essential, or you will get a bitterness that can destroy the whole dish. Chinese rice wine (or a dry sherry) is also a great way to build flavor and is quite common in an authentic stir fry. I would bet this same sauce with fresh green beans (Chinese Long Beans) would be great on some crispy fried fish nuggets as well. Well done, Marion!
So easy an so delicious I make a jar when ever I’m visiting my adult nieces we all love it I added eggplant to my sir fry last night Absolutely magnificent. Think I’ll be making eggplant in black bean magic sauce as a side dish from now on. AMAZING 🤩

Marion, I wish you would have explained the "fermented black beans" in a little more detail. Although they may be called and even labeled "black beans" they are indeed fermented soy beans. I'm in California, "black beans" are literally black beans (turtle beans, caviar Criollo, and frijoles Negros), typically used in Latin American cooking/recipes. Some viewers may not know this.🤔

A word of warning for everyone, make sure you don’t let the meat marinate too long as it’s extremely effective at tenderising the meat but if you leave it too long it gives it a really strange, overly soft texture of poor Chinese takeaway.
Very true! I usually marinate tough beef for max 20min (from 10min should be ok), then rinse off the bicarb and add in the cornflour etc. This way you tenderize in a controlled way and don't have that bicarb flavour that sometimes can come through
Really great to see more sauces being made from scratch Marion, beef and black bean was always a favourite growing up but I’ve not had it in perhaps 20 odd years. I should give your home made sauce a whirl, it’s definitely a keeper recipe. More please. Also I know I have asked before but I missed the answer, what brand are the knives you are using? I thought they were the Shun special edition White knives but they are a bit different from what I can tell.

I like this recipe to be a bit more spicy so I will sprinkle some chilly flakes or fresh ground black pepper. Not too too much for it to be too too spicy, just a hint of heat to my liking anyway.

She rarely does, but my thought to add noodles also. I added 1 tbsp soy sauce and 1 tbsp Shaoxing wine to the marinade and it catered for adding 400g noodles well
Beautiful Marion! Some other black bean sauce recipes I have seen have mentioned soaking and draining the beans to get rid of excess salt but you don't do that - is it an unnecessary step then? Just as easy to not rinse and just omit salt from the recipe it's being used in?
This is a fantastic recipe. So so delicious. I am vegetarian and so don't cook a lot of meat dishes/am always a bit nervous about cooking meat for guests in case I f*ck it up but my friend absolutely raved about how tender and tasty it was. I made a tofu & broccoli stir fry with some of the left over black bean sauce and it was 👌🏻 After perfecting my mapo tofu during lockdown this is a super delicious way to help use up the douchi... 12/10 from me! 💜

The Chinese ingredient is made using black soybeans, not the regular black beans most are used to.
This is not something we have in Australia and I’ve never heard of them, likely Marion hasn’t either.
