  • Soya Pulao Recipe:-
    Ingredients:
    - 3 small glasses of Sona Masoori rice
    - 1 cup soya chunks
    - 2 large onions (one for blending and one sliced)
    - 1 large tomato, sliced
    - 6 green chilies (for blending)
    - 1 inch ginger (for blending)
    - 1 garlic bulb (for blending)
    - 1/2 cup fresh coconut
    - 1 bay leaf
    - 4 cloves
    - 1-inch cinnamon stick
    - 1/4 teaspoon turmeric powder
    - 1 1/2 teaspoons red chili powder
    - 1 1/2 teaspoons coriander powder
    - 4 tablespoons oil
    - 2 tablespoons curd
    - Salt to taste
    - Fresh coriander leaves
    - Mint leaves
    - 6 small glasses of water
    Instructions:
    1. *Preparation:*
    - Rinse the rice in water until the water runs clear. Drain and set aside.
    - Soak the soya chunks in hot water for about 5 minutes to soften them. Squeeze out the excess water and set aside.
    - In a bowl, add the soya chunks, curd, red chili powder, coriander powder, and a little salt. Mix well and leave for 5 minutes.
    - Blend the fresh coconut, green chilies, ginger, garlic, 2 cloves, a little cinnamon, coriander leaves, and mint leaves into a fine paste.
    2. *Cooking:*
    - Heat oil in a pressure cooker over medium heat.
    - Add the bay leaf, cloves, and cinnamon stick. Sauté for a minute until fragrant.
    - Add the sliced onions. Sauté until the onions turn golden brown.
    - Add the sliced tomatoes and salt to taste. Cook until they become soft and mushy.
    - Add the soya chunks mixture and fry for 1 to 2 minutes.
    - Add the blended mixture and fry for another 1-2 minutes.
    - Add the rice and 6 small glasses of water.
    3. *Pressure Cooking:*
    - Close the lid of the pressure cooker and let it cook until it whistles once.
    - Turn off the heat and let the pressure release naturally.
    - Once cooled, open the lid and mix the pulao gently.
    4. *Finishing:*
    - Serve hot with raita, salad, or your favorite side dish.
