Your content is so comforting 😊 I love that you love Tuna Mac too! My Nana fed us Tuna Mac 40+ years ago, I’m one of 5 Granddaughters and my Nana babysat us all and fed us on the cheap. I love baked potatoes with all the fixings it’s my “girl dinner” 😉 Btw your vlog about your trip with the icebergs & whales made me consider taking a cruise. I always said I’d never cruise but after watching that particular trip I was like WOW 😮
Great meals love a good pantry challenge. I am going through my freezers and trying to clean some things out I have a ton of food allergies so I am currently eating gluten free, dairy free, soy free, not eating eggs, nuts, oats, rice, beans. I am able to have meat, vegetables and fruit. I look forward to see what you come up with for next week! Take care and have a great week.
That sounds pretty restrictive! I tried the paleo diet for awhile and felt really good but it was sure hard to stick to and cook for other people in my family at the same time :P I don't live without dairy very well! No eggs too?! That's impressive
Love it…I’m thinking of cutting my grocery budget to $50 per week…usually I am around $100 a week (two adults two children) but the next several months are going to be tighter financially and every bit helps right!!
Thank you Melanie! I’m always so happy that you enjoy the videos 😁 It was a perfect whale! So calm and peaceful! I’ll have to make a video with the sound because it’s pretty cool to hear the blow hole! 🐋
If it was me, I would either make a chunky beef & potato soup with mushrooms ( like Campbell’s in grocery store), or make a beef pot pie with diced potatoes, carrots and green peas, or a shepherd’ pie, or a beef and vegetable soup. With the pork chops I would make: pork chops with Cumin Rice. What about making some muffins out of the squash mixture for breakfast and some squash quick bread( like pumpkin bread). Treat the squash like it is pumpkin. If you have any dried cranberries and a fresh orange adding some of the zest and juice to flavor it, along with some chopped nuts if you have any. If hubby has a smoker, have him smoke that big bone in pork roast… or just roast it low and slow for around 20 to 30 minutes per lb. You can either go savory with tomatoes poured over it, go sweet with some of your frozen pineapple or place it in a slow cooker with some kind of soda( root beer or coke, Pepsi), bottle of barbecue sauce and couple of onions quartered. Cook low for around 8-12 hrs depending on weight. Then have: pulled pork sandwiches, use tortillas and make carnitas, stir fries, baked potatoes topped with the pork and cheese, poutine( using your gravy over French fries, with this meat and cheese. Make some teriyaki chicken with the pineapple ( make own version with garlic, soy sauce, honey, oil and pineapple juice( blend up pineapple chunks with some water & add to this mixture…until it is sweet enough for you. Then marinate overnight flipping chicken couple of times. Bake chicken in oven with sauce and serve over rice. That or throw everything in the slow cooker…you can even make some pineapple chicken or sweet & sour chicken. 😅 Go girl you have plenty to work with!
Yay! You are a favorite so glad to have your creativity back. I'm looking forward to anything you make. I just love the way you cook! Definitely agreeing about the little tortillas...rip then up or use in stripes for enchilada casserole or some other Mexican inspired hot dish. I actually love the way the tortillas sop up the sauce while cooking. Lots of options there (maybe even sneak in some squash in the sauce).
small tortilla make great fold over quesadillas of any kind. chicken, bean, cheese, veggie. add a little salsa, sour cream andsome lettuce would make it a great lunch.
The pasta dish looked delicious!!! I noticed the name of the cookware on the handle and I thought it was the same name as those little sausages you used....lol😁
with your small tortillas... if/when you roast up one of those chickens, you could use leftovers along with some of your sliced frozen peppers and onions plus some cheese to make up either quesadillas or fajitas for lunch.
We had to replace our water heater when we got home from our mini get away and so other than purchasing a turkey for Thanksgiving supper when the boys are home and a ham (good sale on right now) I am looking at using things up as well.
Sometimes expensive come like a giant wave! I’ll be using the freezer and pantry for Thanksgiving this year…I think I can pull it together! I found a small turkey in the bottom of the freezer 😁 🦃 and I’ll pull odds and ends together!
Our egg prices are more regulated here. They don't swing quite as wildly as it do in the states. But I have noticed some lower sales than there has been. So I would say the prices are stabilizing for the moment.
I finally grew ground cherries. Not bad. Not something I crave…but makes my spaghetti sauce tasty. Everyone who I’ve seen grow it on UA-cam had plants like yours. Small and didn’t need much space. Took one raised bed to put them in. Mine got over three feet tall and just as wide. I’ve gotten two full gallon freezer bags full. Even with a drought. Not complaining. It really does improve spaghetti sauce. Nice meals you came up with. Those blueberries do look very plump. 🧡❤️🩷💙💚🦋🦋🦋
This year mine went wild too! I have huge plants!! I didn't love them at first but I really appreciate how resilient they are and they are awesome at self-seeding! I'll have to try them in spaghetti sauce! I've never heard of that :D

Tuna Mac and Cheese is just pure comfort food for me
I'm so excited for this challenge can't wait for more 🎉😊
Yay! I’m so glad to have you here. There were some unexpected bumps but I’m looking forward to it as well!
Love balsamic onion jam. I love it on BLTs , fried egg sandwiches, meatloaf. Tomato slices......love the stuff!
I love it too! I'm going to have to try it on fried egg sandwiches! YUM :D
Our daughter adds a bag of garlic mashed potato flakes to her beef stew - gives is a perfect creamy texture
Ohhh that sounds tasty! I'll have to give that a try :)
Hi Jessica❤love the challenges.
Yay! It's great to have you watching :D This is really setting up to be a "Bit of Everything" Challenge! I'm looking forward to it!
When I am going through the freezer I pull out my winter gloves so that my hands don't freeze. Love the new challenge!
Great Idea! I really have to get to the bottom! I have dreams of moving that freezer lol

@JessicaWanders Also breakfast tacos. I love fish tacos on them too.
You could cook one of those pork roasts in a crockpot and then use the meat with all those tortillas and make a mess of enchiladas!
Mmm pulled pork recipes a' plenty right? Enchiladas sounds YUM1 :) Great idea!

Oh, how about a mexican type lasagna? Using the small tortillas as the noodle substitute?
Ohh that could be cool! Thank you for the suggestion! :)
Slow that pork with Mexican seasonings...use the small tortillas for pork taco, quesadilla etc
Great idea! Thanks for sharing :)
Ahh there you are 😊❤
I'm back for an "everything" challenge...just a bit of everything! ;)
LOL Here I sit blowing your hot stew with you. Looks delish!

Have you thought of making breakfast wraps with the small tortillas? Sounds like you have some eggs
That's a great idea! I think I have some sausage that I could use too! Thanks for the suggestion! :D
Could you share the balsamic onion jam recipe that you use?
You bet! It's in "The All New Ball Book Of Canning And Preserving" Here's my affiliate link ;) amzn.to/3zXWJMD
Can you use the tortilla for lasagna( instead of noodles)?
Ohh like a layered tortilla lasagna?! That could be yummy! Thanks for the idea :D
Taco lasagna!! We love it here
Have the egg prices in canada sky rocketed the way they have down here??
Our egg prices are more regulated here. They don't swing quite as wildly as it do in the states. But I have noticed some lower sales than there has been. So I would say the prices are stabilizing for the moment.
You bet! Just looking it looks like it’s about $4 a dozen! For regular medium white eggs. That’s about $1 more than the last time I bought them!
