That Grievous line isn’t exclusive to Rey. It’s one of the two lines he says when being selected.
Doesn't he say it to most Lightsaber users?

Also, how the heck did you manage to keep the Rancor active for more than 2 seconds at a time? Every time I try to deploy it it autoswitches me back to whoever I had last by the time I've taken like 4 steps.

Just sounds completely different. The official one would have sounded too edgy. Same with Vader, far higher pitched and sillier.
