You can legit Lee just throw a bag of potatoes in your basement for a few months and then cut them in the quarters and throw them in the ground and they will grow potatoes lol
Not always, the growers spray a sprout inhibitor on their potatoes, so even if they do sprout, you won't get as good of results as if you planted certified seed potatoes, potatoes you grew the prior year, or even organic potatoes that havent been sprayed with sprout inhibitor.

If you are using store bought potatos make sure to soak them for a couple of hours. Stores cover the potatoes in growth retardant so that they don't grow while on the shelf.
My family have always cut them up more than that and they usually do fine growing from smaller chunks. Is it riskier? Or makes it a longer growing period? Dunno. Last year it worked for me. Kennebecs is what we've always preferred, they're tough hardy and versatile.

Sweet potatoes are done differently. You have to lay them sideways in a bed of potting soil making sure they are just over halfway buried. Keep them moist and wait for them to grow "slips". Once the slips grow about 6 inches, you can carefully pluck them off and they should have roots started from underneath the soil. Put them in a bucket of water to continue developing the roots and change the water out every couple of days. Then you can plant them out in the garden. You don't plant the original sweet potato like you would a regular potato. Just the slips. It takes a month or two at least so start them early! I'm in Gladwin so I started mine last week.

What should we do if our potatoes have sprouts a foot tall? Can the sprouts be trimmed, and then do this process?

Is there something you can use instead of honey?
Aloe works pretty well. Also, you might try a strong tea made from oregano.
