Japanese Hot Pot YOSENABE (RECIPE) 【寒いときは鍋だねえ】うちの鍋はこんな鍋・・寄せ鍋

  • When the weather turns cold, we like to warm up with some Yosenabe Hot Pot. ※日本語の字幕は、設定で字幕をオンにしてください。
    This Japanese favorite is enjoyed all over the country at homes everywhere since it is super easy to make and satisfies hearty appetites.

    INGREDIENTS
    (Feel free to substitute your favorite vegetables and ingredients)
    chicken thigh(cut into bite-sized pieces)
    chinese cabbage (cut into 2-inch pieces)
    tofu (cut into blocks)
    enoki, shimeji and shiitake mushrooms
    garland chrysanthemums (cut into two)
    carrot (sliced)
    shirataki noodles (cut into bite-sized pieces)
    negi - welsh onions (cut into 1 inch pieces)
    konbu and bonito flakes (or 1 pack instant dashi)
    1/3 cup sake
    1/4 cup soy sauce
    1/4 cup mirin
    3 cups water
    DIRECTIONS:
    Soak konbu strips in water for 30 minutes. Cut up all the ingredients for the nabe. Bring konbu to a boil. Take konbu out immediately. Dump bonito flakes into the same broth and simmer for 2 minutes. Strain the broth and take out the bonito flakes. Discard the bonito and konbu or use save it for something else. This is your dashi or Japanese broth for the hot pot. Add the dashi to a large pot. Add mirin, sake and soy sauce. Bring the stock to a boil. Turn heat to low and add ingredients to the pot. Cover and cook on medium high until chicken is thoroughly cooked. Serve family style in the middle of the table and share with family and friends. Take your favorite ingredients and dip in ponzu sauce. End the meal by adding noodles (udon, ramen) or rice into the broth and enjoy.
    PONZU SAUCE
    1/4 cup soy sauce
    1/4 cup mirin
    1/4 cup sake
    juice of 1/2 a large lemon
    Combine mirin and sake in a saucepan and heat until boiling. Turn off the heat and add the soy sauce and lemon juice. Enjoy as a dipping sauce to the ingredients in the Yosenabe Hot Pot.

    【材料】(一例:お好みの分量で)
    ・鶏もも肉
    ・白菜
    ・春菊
    ・長ネギ
    ・豆腐
    ・シラタキ
    ・シイタケ
    ・しめじ
    ・エノキ
    などなどお好きなもの
    (だし)
    ・コンブ 
    ・鰹節
    (ポン酢)
    ・醤油  1/4カップ
    ・みりん 1/4カップ
    ・酒    1/4カップ
    ・レモン搾り汁 1/2個
     ※ポン酢は、酒とみりんを鍋に入れて火にかけ、アルコールを飛ばします。醤油とレモン汁を入れて完成。

    When I miss Japan, it is often a food memory that triggers the feeling. I love and miss Japanese cuisine.
    Sharing a meal makes people like each other or as the feel closer with strong bond.
    Eating the same food leads to trust and cooperation because they feel closer with the feeling of intimacy among those eating together, share the experience with eating and drinking.

    The best hot pot I have ever had was a few years ago at a traditional archery tournament outside of Fresno, CA.
    It was bitter cold and we were camping for the weekend in a tent. The hot pot had dashi stock, tofu, chicken, shrimp, mushroom, broccoli, carrot, onion, cabbage, and likely a few more things that I can't remember. While the meal was great, it was the time, place, and company that really made it special.
    If you really want to enjoy a hot pot, cook and eat it outside when it's cold and be sure to have good friends there, too!

    I reminds me of what Mom makes but we call it "Boiled Dinner" it contains, cabbage, carrots, onions, ham and sometimes potatoes. But it's the same concept as your Hotpot

    the yosenabe looks so yummy, and so beautiful. The thing I love about japanese cuisine is how beautiful it always looks, so colorful and full of different shapes. It's not just food for your belly but food for your eyes as well. Love it!

    +Sakura Spring Actually that white disc thing is nothing important. It came with the pot we purchased because we were looking for one that could be used on an IH stove. When we use the IH we have to keep that hole thing on the bottom. Normally nabe pots don't have them so don't worry. :) Stay warm my friend.

Of course, I was delighted to hear you say I could add fish to my yosenabe. This is a wonderful, low-carb dish that's probably too challenging for me to try, but it was fun to watch you prepare.     That looked great. Here in Fukuoka, it's all about motsunabe, or occasionally kimchinabe. But those are such hearty soups, that looks way more delicate tasting, but equally good.

    you could also take the leftover stock and put it into ice cube trays and freeze it and the pop out a few cubes and use them in other dishes you're making :)

    This is my absolute favorite dish! I have a winter birthday, and when I go out to eat on my birthday, I order yosenabe! I get seafood yosenabe, and it is so delicious.     Arrhh this looks sooo tasty and warm, literally salivating here! And it also reminds me of our shabu shabu lunch together, dining with you guys was awesome! Hope you are keeping warm guys! I looked at Tokyo's weather forecast today, not too dissimilar to London temperature wise, but you seem to always have the northerly winds, which makes a huge difference. This is the perfect dish for the chilly nights for sure! 😊👍🏻👍🏻

    I have made sukiyaki many times but would like to try this for a change. How many people will your recipe serve? I want to make this for 8 people. I have one electric fry pan and not sure if this will be enough. You make this look simple and delicious! Thank you!

    I have to share this little story. See, my husband is from NY/Ohio where he was so Midwesterner, and nothing to do with Oriental food. It took me 3 tries to explain to him what NABE was. Yes, Nabe is a hot pot and yes, Nabe is an utensil. Can you believe I had to really explain that to him? Now after all these trials, he knows what a Nabe dish is about. Lol.

    You know when I went back to Japan for 3 months from Oct to early Jan last year, I made HITORI NABE every day. I kept on adding Tofu, Shirataki, Fish, etc, etc. It normally took me 3 days to finish. And I got tired of it but the following week, I did the same thing. Hahaha. And my son reuqested me to make a Nabe when we visited in August 2015, just a few months ago. And I made it very reluctantly. My son and his 3/4 American friends loved it. Me? Well.....I sweated a lot. hahaha. Not in August, dudes.

    Ooo, sausages sounds wonderful in this dish!
    I make a chicken noodle soup that my hubby and dad love. I make a mirepoix with onions, garlic and celery and spices in a cheese cloth, and cook a whole chicken in a big pot with that. That only takes about 1/2 an hour, really. Then I drain the chicken and tear it into chunks. I return the chicken to the stock, add nice big noodles and cook them a few minutes until done. Hubby wants his soup to be "just chicken, noodles, and broth", so I sneak the mirepoix in with the bird to add flavor, lol!
    I put the veg in a smaller pot with some broth to add to my portion. I also like to add lemon juice.
    That big old pot will last us quite a while.
    It's finally cold here, it may be time to make a pot!

    Mmmm that yosenabe looks delicious...the weather is getting colder where i am too (though not as cold as last year). I do have a question this is basically a soup correct...can this be made in a regular soup pot or do you need special equipment and if it can't be made in a soup pot are there similar japanese soups that can be made in a pot?

      +Emma Colodner Although this is not meant to be soup, you can actually make it a soup no problem. In fact, if I'm eating alone, I just throw everything into a pot and make soup just like this. If you do make it like soup though, you'd probably have to add a bit more soy sauce and/or salt to it for additional flavor. But please improvise and have fun!

    What if there was a Japanese version of an English steak and ale pie? A meat pie with chunks of beef cooked in some kind of alcohol then stuffed into a pie (maybe with some vegetables) and then baked.

      +mylesallen1970 Aww thanks so much. Actually for this particular hot pot, you could substitute almost anything you like. The difficult part might be the hot pot stock. If you don't have access to konbu or bonito flakes, you could use the instant dashi that comes in a box, which are fairly easy to find online. I left some links in the description for you.
      Instead of chicken, fish and/or seafood is another great option. I hope this helps.

      +adam cunningham for Shabushabu, you would dip the ingredients in a ponzu sauce and sesame sauce. Yosenabe is always with just ponzu and never includes beef or pork. It's usually chicken, fish or vegetarian. Also with shabushabu you eat the meat after swishing it in the broth for just a few seconds. This yosenabe you simmer in the post longer. I hope this made sense to you. Enjoy!

      o ok thank you , there is a advertisment in my town and they look very siomilar , i have never went there i usually go to the yakitori place underneath....lol... o i never got to answer , but i like oden and the sweet azuki stew with grilled mochi
