    Love that stuff..my grandfather had a fruit store 1940-1970's and sold many flavors of what was called "shoe leather" ..thanks for the memory and the recipe

    Hey henry. I followed your exact instructions just like i have a couple of times in the past But this year my lavashak got mould on it. Any diagnosis?

      When did it start showing a bit of mold

      It could be caused by over ripe plums

    Henry, I received a gift of Takdis brand lavashak "toffee" which are bite sized, soft and chewy. I like the dry "leather" rolls in certain situations, but as a runner the soft bites are perfect to eat while running. Can you give me any tips on how to make lavashak like that? thanks in advance!

      You can stack sheets of lava shark on top of each other and then cut into cubes.

      +asolis1982 will work with strawberry, it won't exactly work with melons as they are too watery

    Thanks for the video. Is there a reason you heat up the plums into a paste instead of just putting them straight into the processor?

      Yes, basically it breaks it down into a smooth paste. Adding it straight to a food processor won’t have the same effect and have a chunky result

    Hi Henry, love this recipe! Do you recommend using stone fruits in particular? Do you think pineapple would work? I'm also thinking the the sugar is somewhat variable? And please what is there a specific weight for the fresh fruit for 1 sheet tray? Thanks😺

      +Lisa Storhaug it would only work with fruits that aren't so watery, it's possible to work with pineapple. It's hard to say by weight because it just depends on the size of the tray 😂

    Ohhhh my good thank you very much i really looove this. Also in Iran you have something called( آلو) . Like dried fruit i really wish you can make video for the recipe

    Hi Henry jan, thank you for this great video! I always thought Lavashak was made with Zereshk (Barberries) right? Can i just take dried Barberries (the kind we buy in the Persian store for zereshk polo) and soak them to rehydrate them then follow the same recipe but with more sugar and no lemon juice???

      You absolutely can, but if you add barberries I don't suggest going with this method because they won't dismantle like plums resulting in uneven paste at the end.

    hey thanks for the video, I really want to make this cos I haven't had this in ages, but how do I make it sour cos I know there r different version of these. so what fruit should I use to make it very sour almost with a little spicy taste at the end. if anyone knows please let me know what fruit I should use? and can I add more then one fruit.

    I recommend using gojeh Sabz (Persian sour plums) which are more sour and tart.

    Great vid. I imagine u could dry it out at very Low heat in the oven too and speed up the process / avoid cheesecloth. What do y’all think?
    I was introduced to lavashak by my Persian friend. I could eat a whole bag of Takdis in one sitting if I didn’t stop myself 🙂
