What a wonderful, versatile recipe. I don't have any cranberries in the house at the moment, but I could easily swap in blueberries and even lemon peel and make these today without going to the store.
Thank you Kevin.I didn't have all your ingredients. So I improvised! Instead of Cranberries I used Sultanas. I grated the Apple. I used some Almond Milk with a couple of tablespoons of Greek Yoghurt. So this could be a lower fat version! I couldn't find Vanilla Essence so used Cinnamon instead. Voila - Mmmm absolutely delicious, light, fragrant and moist Fruit Scones! Lovely to meet Mr Fox at last. You both have such a beautiful, warm and cosy home.
I loved your Christmas Tree Mr Fox. It reminded me of my late mother's Christmas Tree. I will be watching this video over and over to see your beautiful Christmas Tree, as it reminds me of Christmas past, when I was a child and when I still had my beautiful mum with all the lovely memories. Mr. KLJ, my neighbor just left. At first, I was worried the dough would not come together, but it did as described. These scones were perfect, fluffy, and just a perfect balance of slight sweetness and tartness. I used my Old Country roses. I love the “Moonlight Rose” collection, so I will try to collect a little at a time. Thank you very much!

After my success with your vegetable tart I thought I'd try making these scones - and they are fabulous! A big success with everyone. I made them for Valentine's Day, using a smallish heart-shaped cutter, for mini-scones. Only difference with ingredients is that I used my favourite Cox's Orange Pippin apples, and Forest Feast whole snacking Canadian cranberries, (cut into quarters). Your scone recipe is the only one I will use now. Utterly perfect and 'moreish'! Thank you! Love from England.

Hi Kevin, another excellent scone recipe. A little like your excellent Special Afternoon Tea Scones with the heavy cream. I've made those and still have a few in my deep freezer. I like the idea of adding an apple to the mix. Apart from your sensational Cranberry Sauce, I'm not usually too keen on the berries so I'd substitute Raisins or Sultanas instead. I have a humble recommendation! Instead of white sugar on top of the scones, try Sugar in the Raw or any turbinado sugar. Darjeeling and scones, we definitely could be friends. 😊

Two of my favorite things for fall, apples and cranberries!! I do have a couple of questions for you. Can dried cranberries be used instead of the fresh ones? And could a person freeze these if needed? I love scones, and these look wonderful. Thanks Kevin!
Hi Ellen - fresh, frozen cranberries are wonderful here, but in a pinch you can absolutely use dried cranberries. You can freeze leftover baked scones. You can even freeze the formed, raw scones, and bake them off at your leisure. Enjoy!!!

These scones look delicious. The apple dices seem a little large for me. Can I chop them up just a little smaller? Also, the same for the cranberries? i think these would be great with blueberries too, since those are something that I keep a lot in my freezer. The scones should stay fresh and wonderful for up to 2 days if stored in a zip-lock bag (or some other storage container) at room temperature. Enjoy!
