This is the only video I can find that pretty much covers what I'm looking for. I want to design a part that fits into another part using a 3D scan, its not a floor mat though, but I should be able to transfer this over to what I'm working on.

So how can I turn this model into a 2D drawing when I want to cover this mat with fabric?

Loft Wizard cool desition for this type of work. I like it! But I think the "Trim" operation can be done step by step for 2 surfaces each time. Its saves my head from

You are correct and I did mention that in the video. I prefer to trim all at once if I can but either way will work.

Do you know a company that I can contact to make custom floor mats for a 2001 Jaguar S Type. I live in the Dominican Republic, so my car won't be available to scan

Check out mats from WeatherTech, Husky or SmartLiner. They all use 3D Creaform 3D scanners to generate their floor mats.
