This is the only video I can find that pretty much covers what I'm looking for. I want to design a part that fits into another part using a 3D scan, its not a floor mat though, but I should be able to transfer this over to what I'm working on.
Loft Wizard cool desition for this type of work. I like it! But I think the "Trim" operation can be done step by step for 2 surfaces each time. Its saves my head from freezes)
Do you know a company that I can contact to make custom floor mats for a 2001 Jaguar S Type. I live in the Dominican Republic, so my car won't be available to scan

Great video! And very useful.
So how can I turn this model into a 2D drawing when I want to cover this mat with fabric?
I would use a product like ExactFlat to create a 2D pattern from a 3D shape.

You are correct and I did mention that in the video. I prefer to trim all at once if I can but either way will work.

Check out mats from WeatherTech, Husky or SmartLiner. They all use 3D Creaform 3D scanners to generate their floor mats.
