Do you recommend the 3mm or 5mm for stickers
It depends on what you write on them... but I would say 5 mm
are these the same markers that Michaels art and craft stores sell?

Step no, they're Montana...just look a bit different than what they show in this video...Liquitex are food for certain things, but are watered down.

They are not permanent, but you can get a long-lasting result using varnish.
