How Do You Make Authentic Afghan Qabili Palaw at Home?

  • Hello followers! Today, I’m sharing a flavorful Afghan dish: Qabili Palaw (also known as Kabuli Palau).
    Ingredients:
    • 3 cups of rice
    • 1 kg lamb meat
    • 500 g carrots
    • 1 big onion
    • 1/2 cup peeled sliced almonds
    • 1/2 cup raisins (washed)
    • Oil (as desired)
    • Salt
    • Mixed masala (for Qabili Palaw)
    Instructions:
    1. Soak the Rice: The night before, soak the rice in water.
    2. Cook the Meat: In a pressure cooker, add oil and the chopped onion. Sauté until the onion is golden. Then, add the lamb meat and stir until it changes color. Add boiling water, salt, and mixed masala. Cook for 20-25 minutes, or until the meat is soft and tender. Set aside.
    3. Prepare the Rice: In a separate pot, bring 2 liters of water to a boil. Add the soaked rice and cook until it’s half-cooked. Drain the rice.
    4. Fry the Carrots: In a pan, heat some oil and fry the carrots until they are medium soft, not crispy.
    5. Caramelize the Sugar: In another pan, add oil and sugar to caramelize until it’s almost burnt. This will give the rice a nice brown color.
    6. Layer the Dish: Add the caramelized sugar over the half-cooked rice. Pour 1 cup of the meat broth on top, then layer the cooked meat, fried carrots, almonds, and raisins.
    7. Steam the Rice: Cover the pot and let it rest on very low heat for 30 minutes to allow the flavors to meld.
