First time i’m seeing dosa with so much ingredients to the extent its turning into a pizza, looks pretty amazing tbh. The local dosa here in singapore is just the plain folded ‘pancake’ with some curries by the side. Seen some stuffed versions too but they turn out looking more like burritos than the ‘pizza’ presentation in the video
That's why these individual street vendors are the best. They thin of their customers first and have the power to do whatever they want to make it as delicious as possible regardless of how much ingredients goes into one dish. Have large pitcher of cold water to serve guests with a burning mouth from some of the hot curries, chilies & chutneys. Southern Indian cooking is my favorite. I like to make white fish in tamarind paste red curry, with fresh ground baby coconut, mint, lime juice, thai chili peppers 🌶 🥰

That's why these individual street vendors are the best. They thin of their customers first and have the power to do whatever they want to make it as delicious as possible regardless of how much ingredients goes into one dish. Whereas chain restaurants need to follow a strict recipe set by greedy management to save as much cost as possible to reap in profits first, then think of customers second.

I understand. Dosa batter is made fresh, cooked on the surface of the bottom of a flipped-over, very large round cooking pan in a Halal vegetarian kitchen. Served folded and wrapped in cloth to keep warm. Traditional Southern Indian fillings are served seperately in bowls. Each person tears off a piece of Dosa and adds a filling of their own choice, like potato aloo, mango chutney, and other fillings, for a very colorful presentation. Have large pitcher of cold water to serve guests with a burning mouth from some of the hot curries, chilies & chutneys. Southern Indian cooking is my favorite. I like to make white fish in tamarind paste red curry, with fresh ground baby coconut, mint, lime juice, thai chili peppers 🌶 🥰
Dosa is just like a crepe. Doesn't matter what you add on top as tastes can vary from regions regions
