Please tell me ,why is he decreasing depth of the trench?

Water doesn't drain away but stay on a top of furrow and because in the next step we hoe potatoes, soil will be on top of trench again. Potatoes grow up and by adding soil on top we force them for more grow up. Crop will be better. We destroy weeds by hoeing. More care of potatoes you can see in next videos. Thx for watching.

In india ,we also do the same but doesn't decrease the depth,, after germination we hoe them, then add soil and make the furrows nice ,clean and thick with good depth.
