It’s mixed frozen then mixed and frozen again. No wonder it has that fluffy pure taste. That would be awesome if I had the tine. I’ll continue to support Haagen Daas by buying it in the store. Thanks for showing this though. Once day I’ll try it!

How long do you leave it in the freezer for the first freeze in the pan? Your ice cream looks incredibly smooth for being made without an ice cream maker. Will definitely try this.

Abbie Nguyen check out the recipe I posted perfect haagen daz every time. If I want chocolate I just stir in 2 tbs cocoa powder to the milk when I heat it.

Depends on your freezer temperature, remove it just when it starts from liquid to become solid. For my GE freezer this is 3h. I started making this ice cream 4 years ago, since then never purchased ice cream from the market.

That's one tasty looking ice cream. I have 2 questions:
    1. What's the purpose of filtering the mixture before the first freezing?
    2. When I have chance to make this ice cream, I'd like to put oreo crumbs in it. Can I use the oreo's filling as a sugar's substitute? If I can, how much filling should I put in?

1-To remove some pieces of egg yolks
2-remove 50% of the sugar filling weight
example: 100g filling remove 50g of sugar from the recipe.
Watch this oreo ice cream recipe. ua-cam.com/video/_QeCdSnmU1A/v-deo.html

Can i use heavy whipping cream instead? it is hard to find heavy cream around my area. I went to costco, walmart, and smart & final, and they only carry heavy whipping cream.

1 cup milk 2 cups heavy whipping cream 3/4 cup sugar 3 yolks 1 tsp vanilla and you need an electric ice cream machine.
Heat the milk & sugar but not boiling. In a separate bowl stir the yolks - then stir in 1/2 of the hot milk then return it to the pan stirring constantly just till it starts to thicken.
Immediately transfer to a cold metal bowl in an ice bath and stir till cooled. Place the bowl in the fridge till ice cold stirring occasionally.
Stir in the cream & vanilla & freeze in the machine till thick soft serve consistency. Transfer to a cold bowl & then freeze it.
After it freezes you will have scoop-able Haagen Daz vanilla ice cream 🍨
1,000 calories per serving (just kidding who knows who cares)😂

@@steviegee2011 after we've stired 1/2 of the hot milk, do we add the other half and return in to the pan ?

    • @steviegee2011
      @steviegee2011 5 років тому

You can play around with the cream to milk ratio. You can increase the amount of milk & decrease the cream ratio to your taste. You should always add some amount of cream or the scoop-ability & “mouth feel” will be ruined.

    • @steviegee2011

PepsiZ94 not necessary the egg yolks will be tempered with this process & returned to the pan immediately stirring until it starts to thicken

Bagsy try xantham gum, guar gam and locus bean - about 3-5 gr per litre. Substitute milk with evaporated milk 😉

You can mix milk (2/3rd cup) with a light oil (1/3rd cup).. (like sunflower oil) and put it in the blender with a very good emulsifier like soy lecithin or xanthan gum or gaur gum.
      Works surprisingly well.

Unless this is cheaper to make (and I bet it is not if you actually include your man hours time and 120vdc energy ) I would just buy the Häagen Dazs. Their ingredients is only Egg, Cream, Cane sugar and Vanilla and with no work/time at all! Not a lot of mainstream off the shelf food made with minimal natural ingredients like that anymore.

Good for you. We dont´have haggen dazz in the area I live in, and there was a shelf recall of this ice cream in my country due to the suspition o f 2 CE, 2 chloroethanol , a toxic substance in the artificial aroma.
