    Meringue roll is a wonderful summer dessert that perfectly combines crispy meringue, delicate buttercream and fresh berries. Airy and tasty, it literally melts in your mouth leaving a delicate aftertaste. We need:
    Meringue roll with strawberries
    French meringue:
    Egg whites - 200g
    Powdered sugar - 360g
    Vinegar 6-9% - 1 tbsp
    Cornstarch - 30g
    Cream:
    Mascarpone - 250g
    Heavy cream 35% - 200ml
    Powdered sugar - 40g
    Vanilla sugar - 8g
    Strawberries - 400g
    Mint
    Beat egg whites (room temperature) until frothy, starting at low speed and gradually increasing the speed. While continuing to beat, gradually add the powdered sugar. Beat until the egg foam has a dense consistency. At the end add vinegar and cornstarch, beat at the minimum speed of the mixer for another 1 minute.
    Line a baking sheet with parchment paper. Put the meringue (for convenience, you can use a pastry bag) and evenly level it over the entire surface of the baking sheet.
    Bake at 180°C (top-bottom mode, no convection) for 10 minutes, then lower the temperature to 160°C and bake for another 25 minutes until it’s light golden brown.
    Then take it out of the oven, cover with a new parchment and a wire rack, carefully turn it upside down. Remove the parchment on which the meringue was baked and allow to cool completely.
    All ingredients for the cream must be cooled! Beat mascarpone with heavy cream, powdered sugar and vanilla sugar for about 2-3 minutes at medium speed of the mixer, until it’s creamy. Mix with a spatula.
    When the meringue has completely cooled, cover it with an even layer of cream (leave a little for coating on top), let stand for 10 minutes.
    Wash the strawberries, cut into small pieces and put on top of the cream. Using parchment paper, gently roll the meringue into a tight roll. Place roll seam side down and refrigerate for 2 hours to firm up. Lubricate the surface of the roll with the remaining cream, decorate with strawberries and mint.
    If you store the roll for more than 6 hours, it is better to use processed berries - for example, make confit or compote, but it is much tastier with fresh strawberries.
