  • Hello friends. These few past days were sunny and very cold, with temperatures below 0C. I love winter days like that, especially since most of this winter was cold, grey and soggy. Frosty air and pink sunrises are a refreshing change.
    I've been lost in thoughts lately, thinking about my life and choices I made that led me to this slow living lifestyle. I wanted to share a few things and ideas I gathered through years - ideas which led me to the choices I made today.

    Carrot Cake recipe (non traditional)
    I have a love-hate relationship with carrot cake. To be honest, I absolutely dislike cream cheese frosting, and been searching for a recipe which doesn't use cream cheese. I haven't found one, so had to make my own. This is how this carrot cake came about. :)
    Carrot cake sponge:
    250g plain flour
    2tsp baking soda + 0.5 tsp baking powder
    1/2 tsp salt
    1.5 tsp cinnamon
    1 tsp ginger
    1/2 tsp nutmeg
    100ml oil (any oil would do, but I used olive)
    3 tbsp sour cream (or high fat % yoghurt)
    4 eggs
    150g brown sugar (you can increase the amount if you wish, but I don't like overly sweet cakes)
    6 medium carrots
    1 tangerine (zest and juice - you can use a small orange, but tangerine is milder)
    100g lightly toasted walnuts
    100g cranberries (I'm not a fan of raisins, so used cranberries instead)
    Sift through your flour, baking soda, baking powder and spices. Add salt and mix through.
    In a separate bowl whisk eggs with sugar, then add oil and sour cream and whisk again. Sour cream really adds a ton of moisture to the sponge without making it oily, so please don't skip this step. If you really can't find sour cream, then double the amount of oil or use high fat % yoghurt.
    Pour wet ingredients to the dry and mix well. Then add grated carrots, chopped walnuts, cranberries, tangerine zest and juice.
    Preheat the oven to 180C/ 355F. Pour half of the batter into a lined and greased cake tin. Mine is about 7inch/19cm in diameter, but you can also use 6 inch pan for a taller cake or 8 inch pan for a flatter cake. Bake for 25 mins or until a toothpick comes out clean. Set aside to cool completely. Repeat the same process with the other half of your batter.
    Cream frosting:
    225g sour cream (I used 20% fat)
    100g powdered sugar
    100ml double cream
    Juice of 1/4 lemon
    Whisk together all the ingredients until it forms soft peaks. Set aside to chill in the fridge until your sponge is cool enough to assemble.
    This frosting doesn't taste much like sour cream at all - it's a little bit tangy and fruity thanks to lemon, and has a very mild and silky texture due to double cream. Don't be afraid to try it - it's somewhat similar to cream cheese frosting, but doesn't have that same heavy texture.
    Cake assembly:
    I like to cut my cake sponge into 2 to make thinner layers. I find that they absorb moisture from the cream much better that way. You don't need to cut it and can make a 2 layered cake instead. If you want to cut the sponge in half, you can insert toothpicks around the side where you intend to cut it to help you create an even layer.

    Its my first time on your channel, I was excited to find you. I so love these Slow Living Vlog's and welcome each new one, I can't get enough of them, it seems... 😁
    (I'm a single retiree from a Military background, 64yrs of age, young at heart, an artist and love life in all it's beauty. I think we're living in exciting times with all these wonderful technology at hand and I so wish I was still in the prime of my life... the beauty of life came as a second breath to me, at a late stage in my life (after I'd retired), therefore I live life to it's fullest). (I hope my English is not to bad, where I'm from we got 11 official languages - I'm from South Africa and Afrikaans is my home language).
    Allow me to comment (in general) on your Vlog please, if I may? I just want to through these thoughts out there!!!
    Why is it that everyone (I'm referring to grown-up women, as yourself) copying/mimicking another's ideas in the making of their video's for example; Running through the woods, in open spaces, through tall grass or on uneven foot paths... Some swirling around like a young girl of 5? Hugging trees? Some seems to be some kind of philosopher, sometimes referring to a great Guru, reading paragraphs from a book which must inspire you as the viewer ... And then it ends with baking... Im catching myself, counting the eggs out loud!!😂
    If you see one, you have seen them all, it seems ... there is no longer something original, something authentic... nothing outstanding about the photographer, or something els/outstanding in the backdrop, another type of storyline, in these Slow Living Vlog's on UA-cam... Seems all watches one spesific person because she is successful and then they copy her, hope to get the same success story/result...
    Your filming, editing & the end product is excellent, I applaud you... But, please give us more YOU, something original!!
    I'm sorry if you and your subscribers find me probably to critical - I don't want to be rude - I want to be truthful. I was disappointed to see the same scenes in your video as in other's...

      Thank you for your lovely insight, and please, don't apologise. English is my 3rd language too, and your comment did make me think. :) I do wonder though - what is unique to you? Truly unique, something that hasn't been said or done before, something completely original? Until I find something like that for myself, I'll continue doing what brings me joy, after all I do it for myself. There's nothing original indeed - just something I see, love and use as a sort of therapy. I only have my own life, and that's all I can share at this moment, even if it's utterly non-unique.

    This is an interesting judgment about people-"verbs"... I worked as a hairdresser for 15 years until I got an allergy, because of which my diploma and profession are not available to me. I have suffered for 3 years in search of work in other fields, and I have been destroying myself, considering myself a loser, until now... I allowed myself to just live and enjoy every day, saturating her with her favorite things... We'll see where it all leads, but I'm definitely happier.

    5 Layers of clothing is nothing less I'd expect with such weather! Though it was very well worth getting up early and going out into the coldness, the shots are absolutely stunning! Crazy to see that the gate was almost fully submerged!
    As you said, nothing wrong with having a clearly defined purpose in life, but as usual, it's very important to stay present and see and feel life in all it's aspects.

    I have just found your video. It was so calming, loved the music. The photos of the frost were beautiful. I love walking in the countryside on these crisp frosty mornings and spend a little time seeing nature at its best.

    Oh my gosh! Thank you! The pandemic shut down gave me 2 years to reflect and figure out myself and I totally see my life before the pandemic as a linear trajectory of expectations imprinted on me from birth. I do not dismiss it as wrong but what was. Now, retired and free to do all that I wished to do while in my linear journey, I became afraid and hesitant! Am I too old now to fulfill this creative dreams, live a simpler and joyful life? I am still letting the answer reveal itself but I am learning to mindfully enjoy each day, put less emphasis on shoulds and must-dos, etc. Your interpretation of Wilde was awesome! Thank you for your inspirations.

      I absolutely agree with you! But I also believe we can add moments of joy in between. Life is difficult, and I don’t pretend like I live 100% in fairytale, because sadly I don’t. That’s exactly why I like to create these moments for myself in between the mundane, amongst the duties. Moments that seem like a fairytale even just a bit. 😊

    So sad to see things flooded!! It's hard in the cold winter months to find joy sometimes. These months are a time of patience & preparation for the coming spring. It gives us a time of just slowing down & just unwinding. The frost was so beautiful. Your cake looked amazing & I bet it tasted incredible!! Take care sweet girl 💙

      These floods were a worrying sight, but I just walked there again recently and it seems they have subsided. Some of the paths don't have water on them and you can actually walk through parts of these fields. Snowdrops appeared in some areas too. 😌 I'm waiting for spring too impatiently, but it looks like things are slowly happening in nature. It gives so much hope. Just have to stay patient!
