How to Make Sous Vide Pickles

  • Want delectable, crunchy pickles? If you have a precision cooker, you're set. Using your favourite pickle ingredients (or my recipe below!), you can pasteurize fresh cucumbers and make the pickles of your dreams!
    My recipe:
    5 garlic cloves, halved
    fresh dill
    1 tsp yellow mustard seeds
    1 tsp black peppercorns
    1 tbsp pickling salt
    1/4 tsp pickle crisp (calcium chloride) - get it here: amzn.to/47V4rDw
    As many cucumbers as you can jam in the jar
    Top up with 50/50 mix of 5% acetic acid white vinegar with filtered water
    Pasteurize via precision cooker at 150F for around 3 hours. Let sit in cool place for a couple weeks to hit maximum flavor, and then enjoy!

      Totally! Yeah, I'm always a little afraid to take off the rings and leave them like that, especially as I often have the little ones going downstairs to grab jars for me. Odds are too high they would accidentally open something on me and just leave it down there. 🤣

    That certainly looked like Kosher salt rather than pickling salt. If I used a tablespoon of pickling salt, would that not make the jar too salty? The ratios don't translate from one type of salt to the other.

      Hmm...I'm trying to see in the video. I'm pretty sure it was pickling salt. The kind I buy is sort of large-ish flat discs. I think that's what I'm seeing. I know the ratios are a little different, with you typically needing a little more kosher salt than pickling, volume-wise. I'm usually fairly approximate with the measurements in the pickles, so there's likely some leeway within my recipe for any of those ingredients, even the salt. Not sure if that helps at all or not!       It's the brand name of the product from Ball...it's just calcium chloride, which helps keep the pickles firmer during processing. It's the secret weapon in making crispy pickles. I just updated my video description to clarify that. Thanks for the question! 😁
