Georgian Ragout, Chicken Stew. Chahohbili - traditional Georgian dinner. Instant Pot & Dutch Oven

    Today I will be making another famous Georgian dish called ragout. Chahohbili in Georgian means pheasant, but nowadays this dish is more popular with chicken. Chahohbili is a ragout or stew made with chicken, tomatoes, seasoning and fresh herbs.
    As always I will slightly modify the recipe, to make it easier and more approachable for the beginner cook. I will make this dish in the Instant Pot, which makes it a bit easier, but you can use the same recipe for dutch oven as well.
    By the end of this video you will learn how to make Georgian chicken stew in the Instant pot or dutch oven.
    Ingredients: ( serving 5-6 )
    Boneless and skinless chicken breast ( you can also use whole chicken spatchcocked, tenders or thighs ) - 3lb
    Avocado or olive oil - 2 tablespoons
    Onions ( 2 large onions, peeled and sliced in half moons ) - 2.5 cups
    Garlic ( minced ) - 5 cloves
    Tomato paste - 2 tablespoons
    Adjika paste ( Georgian style chili paste ) - 2 tablespoons
    Khmeli suneli ( traditional Georgian spice mix )- 2 teaspoons
    Dry chili peppers - 4pcs (optional)
    Diced tomatoes ( with liquid ) - 2 cans ( 14.5 oz each )
    Salt and pepper - to taste
    Cilantro or parsley ( chipped ) - 1 cup

    Slice onions and mince garlic. Original recipe calls for the whole chicken, but to save time on carving up and since we are starting a swimsuit season I will use boneless and skinless chicken breast. Cut chicken breast to 2” slices.
    Turn on Instant Pot on saute mode, add some oil and brown chicken on all sides. Season chicken with salt and pepper. No need to cook it through, just brown for about 5-6 minutes.
    Tip#1 don’t overcrowd the instant pot, cook meat in a few batches. When overcrowded, food will stick to the pot and will not brown properly.
    Take the chicken out to a separate dish, add a bit more oil to the instant pot and saute onions until soft and translucent. Add some salt in the process.
    Now you can add minced garlic, tomato sauce, hot peppers, Adjika sauce which is Georgian style chili paste and Khmeli Suneli which is a Georgian style spice mix. Cook it all for another minute.
    You can find Adjika and Khmeli Suneli spices on Amazon. These spices are very flavorful and you can also use them in most other Georgian dishes…..so it is a good investment.
    Now you can add diced canned tomatoes together with liquid from the can. Original recipe calls for fresh skinless chopped tomatoes, but I have decided to cut the corner here.
    Tip#2 Always deglaze the pot after sauteing and before pressure cooking to avoid burn messages on the Instant Pot. Scrape the bottom of the pot with some liquid and silicon spatula to remove all caramelized bits.
    Now, we are ready for pressure cooking. Add chicken to the pot. Close the lid, turn on pressure on manual high for 15 minutes and wait for natural pressure release. Total cooking time: 10 minutes to come to pressure + 15 minutes under pressure + 10 minutes natural pressure release, in total 35 minutes.
    Now, if you want to make this dish in the dutch oven, the process is identical. You will cook chicken under a closed lead in dutch oven until the chicken reaches 165° Fahrenheit. Cooking this dish in Dutch oven or Instant Pot takes about the same amount of time.
    And finally add fresh cilantro or parsley to the dish and it is ready to serve. I like to serve this dish with flat bread or rice.
    Georgia is very famous for its wine. I heard that Georgia has been making wine for over 8000 years. Today I am pairing this great dish with Georgian wine called Kisi Qvevri. It is Dry Amber wine….I have never tried amber wine before. This wine pairs well with chicken dishes, has a very interesting taste and nice velvety finish. Personally I can’t describe the wine very well, but I really like the unique taste of this Amber wine……so I highly recommend it.
