Re Indian food. I remember watching a live cookery show, where the Sikh chef said that most Indian takeaway and restaurant food isn't optimal as white English people tend to go for as hot as possible. Plus won't wait too long for food. So a lot of places have a big generic curry vat, then spoon out and add stuff as appropriate. But only cook it quick, so the spices don't get chance to infuse properly. So stay sharp rather than becoming lovely. So that "Goodness Gracious Me" sketch about asbestos saris is only partly a joke...
A white guy I used to know always ate the hottest option, even though his body would sweat and his face would go red. We had a dinner party at their home where I was cooking and he expected me (a brown person of Pakistani descent) to make very hot food, and was shocked when it was mild, had to tell him that it is normal for food to be tasteful and extreme heat is not the goal.
😂 I am watching this whilst eating 4 samosas for "breakfast" at 1pm. My aunt made us loads and brought them when she visited on xmas eve, so I've been snacking on them cold and hot. Left 1 for my sister who insists on eating them despite being coeliac.
