Never chisel towards yourself or another person, even for a UA-cam demonstration. Always as yse and teach safe practices to keep all of your fingers and arteries intact. Good luck!

Cavity is found in Japanese chisels which are used for carpentry. For joinery you don't need that feature, yours are bench use chisels very nice for this work.
You need to soak the stone in water for 10-15 minutes before you can use it and put some water on it before you sharpen it and wipe the the grey sludge of the stone and you will need a flattening stone to keep sharpening stone flat and in good condition

All the good quality chisels have a dip on the back. It is hardly observable but helps a lot while sharpening
