Why does the freehub have a jumpy inconsistent sound? I know that freewheels often do that when something gets bent but I didn't think that happened on freehubs.

The number seems alright, but without seeing your actual riding position, no one can tell you a definitive answer. The length of your femur, tibia and foot, and your pedalling style (heel down/toe down) all affect your optimal saddle height; nonetheless if you are not experiencing discomfort then it should be good.
Every person is different, it depends on cleates, crank length, leg lengths, and ankle flex (how toe down). But I am the same height as you and ride that same seat height measured from center of bb to top of saddle where I sit, and I'm 100% sure that is the right saddle height for my body.
Stems in 1mm lengths just mean the frame maker refuses to build to requirements. Pinarello is not doing their job. If they cannot satisfy professionals they will never satisy anyone...

Pinarello has always used threaded BB on their frames. Never sold on PF or BB30 BB's for many very good reasons. Cheers!

Seat tube length is a useless measurement, Unless for some reason you have your seat at bmx height.
ITs a 50cm frame size. Same as the f8 he was using before . His saddle height and stem length is identical as he used on the f8
