Laulau: iconic to Hawaiian food, an irresistible package of pork and salted butterfish, steamed in luau and ti leaves. HONOLULU Magazine went inside Keoki's Lau Lau, where 7,000 to 8,000 laulau are produced a day, to see how it gets made.

In the late 60s and 70s I used to live in the Mccully neighborhood. On Sundays I would go to Mccully market on the corner of Mccully and king street to buy freshly cooked Laiulau and poi. Man, I miss those days.

My Tutu made laulau with pork belly, beef, butter fish, and Hawaiian salt, all wrapped in luau leaves then ti leaves and steamed at least four hours. Take them out of the steamer, put out the poi bowl and enjoy ! No casserole pan, no crock pot. The only better method is the imu.

The way I was raised to make lau lau, I was told to de-vein the kalo leaves because if not, your throat usually get itchy. Amazing video tho. I love the amount of leaves each lau lau has. The luau leaves is the best part. Mahalos

Daci J They leave both the spine of the ti leaf and the skin of the taro stem on.......I was told both are no good....haven’t tried their product yet. Mad respect for the workers, but the one chunk pork, one chunk fish, one chunk fat....plus all those stems.....think I’ll just make it myself
