Hi firstly omg that is the biggest compliment thank you so much - I have subscribed to you!! And ahh yes totally, voice over is still the part I struggle with the most. Other than videos like this where I freely chat, for speed builds or tips videos I normally write out what I want to say and record it in small sections so I can get each part how I want it before adding them all together. I try to avoid being anywhere too echoey as well. I hope that helps, I'm so excited to see your videos!
