Good question! For the most part, travelers used oxen instead of horses to pull the wagons, and typically they would keep extra oxen so that they could rotate them as necessary. Having extra oxen meant they could continue on if one died, and they could use the oxen as food if game was scarce and provisions low. Wagon parties were typically fairly large, so it was highly unlikely to lose all oxen, but there are cases of wagons having to be abandoned, along with supplies that didn't fit on the remaining wagons.
